  • Here Today Scone Tomorrow – A Cake Study

    Here Today Scone Tomorrow have been a loyal Bio-Bee customer for over 6 months now. For those that haven’t heard of them, they are a mobile bakery supplying tea and cake for events and festivals across the South West. Philippa Till, the soul employee, founder, baker and director, took time out of her hectic schedule to answer a few of our questions on all things food waste and sustainability. 

    1. What actions do you take as a company to prioritise sustainability? 
    When setting up the company in 2017, I always wanted to do everything I could from the beginning to be green and cut food waste. We had biodegradable packaging straight away, even though it cost more, and so now that the greener rules at festivals have come in we are already there! We have also always sourced our ingredients and products as locally as possible, as it is not only greener but often supports smaller businesses.

    2. Why did you decide to contact GENeco about our Bio-Bee service? 
    We were annoyingly having some food waste left over after events and so we were looking for options for this unsold, surplus food. We came across the Bio-Bee via seeing one of your cute vans pass by. When we looked into it, well, we just thought it was clever! 

    3. Have you taken any other steps, besides using the Bio-Bee, to reduce your food waste? 
    It's always hard to reduce food waste at festivals as you need to bring the right amount of food with you so that no one goes hungry, but we also don't want to run out or have too much surplus or unsold food. We are looking into cakes that can be frozen as well as alternatives to clotted cream for our cream teas, as this product has a fairly short shelf life. This week we are also attempting clotted cream fudge to possibly use up this food waste! 

    4. What, in your opinion, is the best feature of the Bio-Bee? 
    I can't see anything but blue skies for the Bio-Bee. They are a genuinely lovely company to work with and it's a really good solution to the food waste problem that we have. We are eating out more as a society, which is great for us food vendors, but also we do need to come up with solutions for our food waste and I think that the Bio-Bee have got it!

    5. If you had to give one top green tip to our readers, what would it be?
    Freeze your veg! If you are looking at something in the fridge knowing you are not going to use it cut waste by chopping it, maybe cooking it, and freezing it! There is a kilogram of surplus roast potatoes in my freezer this week, all portioned out, and I am feeling so smug! 

    Since starting collections with GENeco, Here Today Scone Tomorrow have recycled 1170 kilograms of edible surplus and unsold food waste, preventing 710 kilograms of CO2 from entering the atmosphere.
